It's getting really close to the end of the month which means time to pay bills. This also means it's time to eat whatever we have in the house. Usually I throw a fit like a little kid and convince Berrae to let me do a bit of grocery shopping (mature, I know) but we happen to only have $1 in the bank until tomorrow. It was lunch time and I was starving. I really wanted something filling but I get so tired of the same old spaghetti with red sauce. That's when I saw my Tzatziki dip in the fridge! If you never had Tzatziki, oh my word. It is a delicious Greek thick dip. The flavor I used for the sauce is cucumber dill (oh my word) but I also have had roasted red pepper too! So between what I had in the fridge this is what I came up with. I love it when I create something super delicious.
Penne pasta (cooked according to directions)
- 2 TB Tzatziki cucumber dill dip
- 1 TB Heavy whipping cream
- 1 TB shaved Parmesan
- Salt and pepper to taste
Combine dip, whipping cream, rosemary, salt and pepper in a mixing bowl. Toss pasta in the mixture and you're ready to serve! Also, it makes a great topping for a baked potato!
